How its made

We make our Gond ka Laddoo the way Dadi always did, slowly, lovingly, and only once the winter winds truly arrive. It’s a comforting ritual that fills the home with warmth…and a whole lot of irresistible aroma.

It starts with good quality ghee melting gently in a traditional iron kadhai. We fry gond until it puffs up beautifully, airy, crisp, and ready to add that satisfying crunch. Next, in the same fragrant ghee, we quickly fry peppercorns, carefully! These little powerhouses like to pop right out of the pan. Once they cool, we crush them coarsely to keep their warming magic intact.

Now comes the patience, slow-roasting aata for 30–40 minutes on low heat. We stir continuously, letting the flour turn a deep light brown while its nutty aroma fills every corner of the kitchen. This is what gives our laddoos their signature wholesome flavor.

After it cools slightly, we bring everything together:
•⁠ ⁠puffed gond
•⁠ ⁠crushed peppercorn
•⁠ ⁠almond slivers
•⁠ ⁠grated dry coconut
•⁠ ⁠bura sugar

We mix it all thoroughly, with hands, like Dadi taught us, and then shape each laddoo with love and a firm squeeze.

And then? We wait. Because just like all great traditions, they taste even better after a couple of days as the flavors settle and deepen.

A quick 10–20 second warm-up in the microwave before eating makes them soft, fragrant and — honestly — pure winter bliss.

Ingredients

300 gm ghee
125 gm gond
30 gm peppercorn
700 gm aata
300 gm bura cheeni
150 gm almond, sliced
100 gm gat nariyal, grated

Heat ghee in a large kadhai. Fry the gond till it puffs up & keep aside. Next fry the peppercorns and be careful during this process because it pops out of the pan sometimes. Drain, crush coarsely & keep aside. Now add aata to the ghee & cook on low heat while mixing constantly for 30-40 minutes or till it’s a light brown colour. This process is quite tedious & even if you’re making a smaller batch it takes about 30 minutes to cook this thoroughly. Take it off heat and let it cool a little. Add the peppercorns, gond, nariyal, sugar, almonds to a bowl & mix well. Add in the cooked aata & mix well with your hands making sure it’s properly incorporated. Shape them into laddoos & dig in.!

These taste better after 2 days. And, you can also heat them for 10-20 seconds in the microwave before consuming.

** if the atta and ghee mixture is too soft, add some more aata to it. The aata mixture should me slightly firm and kinda tough for you to mix at first. (now i am listing laddoo in shopyfy here is the recipe and the description now the attached picture is of chawanprash and now make soething like that for gond ka ladoo)
