Product Information

Kharak, also known as Chuara, has always been one of our favourite winter treats at home. Every year, as soon as winters arrived, Dadi would start making this — and soon our terrace would be full of bedsheets with khajoor drying under the sun. Sneaking a few pieces while they were drying was part of the ritual.

This isn’t just a snack — it’s a traditional digestive churan, made slowly over several days using dried khajoor, fresh lemon juice, sugar, and warming spices. The khajoor is first soaked in lemon juice and sun-dried, then mixed with digestive ingredients like black salt, jeera, shahi jeera, sounth, black pepper and peepar. The mixture is dried again until it reaches the perfect chewy, tangy-sweet texture.

How its made

Method:
1. Dried khajoor are sliced into even pieces and soaked completely in fresh lemon juice.
2. The soaked khajoor are kept under sunlight during the day and indoors at night for 3 days, covered lightly to protect from insects.
3. Sugar is added and mixed well. The mixture is sun-dried again for 1 day.
4. Digestive spices are prepared separately:
• Peepar and shahi jeera are powdered and strained
• Jeera is lightly roasted
• Black salt, sounth and black pepper are used as is
5. All spices are added to the khajoor mixture and mixed thoroughly.
6. The mixture is spread evenly and sun-dried for 3–5 days until it reaches the desired chewy texture.

Once ready, it is packed fresh to maintain flavour and shelf life.
